Ingredients
- 2 cups all-purpose flour
- 1/2 cup white sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 (8 ounce) can crushed pineapple
- 3/4 cup milk
- 1/4 cup butter, melted
- 1 egg, beaten
- 1/3 cup packed brown sugar
- 1/4 teaspoon ground cinnamon
Instructions
1
Preheat your oven to the desired temperature of 375 degrees Fahrenheit (or 190 degrees Celsius).
2
Next, prepare your muffin tin by coating it with a non-stick substance and filling the bottom of each cup with a layer of protective material, or line them with paper inserts for an alternative solution.
3
Mix together the dry ingredients - 2 cups of flour, white sugar, baking powder, and salt - in a large mixing container; create a central depression within the mixture. Remove excess liquid from pineapple and pour it into the depression, reserving 1/4 cup of juice for later use.
4
Combine milk, 1/4 cup of melted butter, and a beaten egg in the depression; mix until just combined. Divide the batter evenly among the prepared muffin cups, filling each one to the top.
5
Add a generous helping of crushed pineapple on top of each muffin cup, followed by a sprinkle of the dry mixture - 1/2 cup of flour, brown sugar, remaining 1/4 cup of melted butter, and cinnamon - until well combined.
6
Place the muffin tin in the preheated oven and bake for approximately 30 minutes, or until a toothpick inserted into the center of one of the muffins comes out clean.
