- 1 large green bell pepper, cut into 1-inch squares
- 3/4 fresh pineapple - peeled, cored, and cut into chunks
- 2 tablespoons cornstarch
- 1/2 cup pineapple juice, or more to taste
- 1/3 cup packed brown sugar, or to taste
- 2 tablespoons cider vinegar
- 2 tablespoons soy sauce
- 2 teaspoons minced garlic

Preheat a large skillet over medium heat and pour in oil to coat the bottom. Sauté sliced sausage, chopped onion, and diced green bell pepper over medium heat until they begin to soften, approximately 8 minutes; add chunks of pineapple and stir occasionally until the fruit is warm, roughly 5 minutes longer.

Combine pineapple juice and cornstarch in a bowl using a whisk until smooth. In a separate container, blend brown sugar, apple cider vinegar, soy sauce, and minced garlic with the pineapple juice until the sugar has fully dissolved into the liquid; pour this mixture over the sausage and vegetable combination, allowing it to simmer until the sauce thickens, 5 to 8 minutes.
