Pineapple-Glazed Pork Tenderloin
Ingredients
  • 1 (8 ounce) can crushed pineapple with juice
  • 1/2 (15 ounce) can mandarin oranges with juice
  • 2 pounds boneless pork tenderloin
  • 1/2 cup brown sugar
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 1 teaspoon ground black pepper
  • 1/4 cup pineapple preserves
  • 1 medium onion, sliced
  • 1 medium orange bell pepper, cut into long strips
  • 1 medium red bell pepper, cut into long strips
Instructions
1
Begin by preheating your oven to its highest temperature setting, which is 350 degrees F (175 degrees C).
2
Next, pour the pineapple juice and mandarin juice into a liquid measuring cup and mix them together. Set the fruit juices aside for now.
3
Place the pork tenderloin in a shallow 9x13-inch baking dish. Sprinkle a blend of spices, including brown sugar, chili powder, garlic powder, and black pepper, over the tenderloin. Then, spread a layer of pineapple preserves evenly over the spices.
4
Add sliced onions and bell peppers around the tenderloin, creating a visually appealing arrangement. Pour at least 1/2 cup of the pineapple-mandarin juice mixture into the baking dish.
5
Place the pork tenderloin in the preheated oven and cook for 25 minutes.
6
After 25 minutes, sprinkle mandarin oranges and pineapple chunks over the tenderloin. Continue to cook the dish in the oven until the pork reaches a safe internal temperature, which should be at least 145 degrees F (63 degrees C). The cooking time may vary, but it should take an additional 20 to 35 minutes.
