Ingredients
- 1/4 cup reduced-salt soy sauce
- 2 tablespoons white wine vinegar
- 2 tablespoons mirin (sweetened Asian wine)
- 1 teaspoon grated ginger root
- 2 crushed garlic cloves
- 1 tablespoon cornstarch
- 2 tablespoons oil, preferably sesame oil
- 1 pound boneless, skinless chicken breast, cut in 1-inch pieces
- 6 large green onions, cut in 1-inch pieces
- 2 cups fresh or frozen pepper strips
- 1 (20 ounce) can chunk pineapple in juice
- 1/4 cup sliced almonds
Instructions
1
Combine soy sauce, vinegar, mirin, ginger, garlic, and cornstarch in a bowl until they form a harmonious union.
2
Heat a generous amount of oil in a substantial skillet and cook the chicken until it reaches a satisfactory brown color and is cooked through, approximately 5 minutes.
3
Take the chicken out of the skillet to make way for other ingredients.
4
Add green onions, peppers, and pineapple to the skillet; cook until everything is warm and cozy.
5
Pour in the soy sauce mixture, stirring constantly to achieve a thickened consistency.
6
Return the chicken to the skillet and cook until everything is warm and inviting.
7
Sprinkle a handful of almonds over the top for added texture and flavor.
