SERVINGS

Ingredients
- 1 (12 ounce) package frozen riced cauliflower
- 1 tablespoon olive oil
- 4 teaspoons curry powder, divided
- 2 teaspoons garlic powder, divided
- 2 teaspoons onion powder, divided
- salt and ground black pepper to taste
- 1 pound ground chicken
- 5 egg whites
- 6 green onions, chopped
- 1 (20 ounce) can pineapple chunks
- 4 teaspoons low-sodium soy sauce, or to taste
Instructions
1
Begin by setting the oven to a high temperature of 425 degrees Fahrenheit (220 degrees Celsius). This will ensure that your dish is cooked to perfection.
2
In a large serving container, combine the cauliflower with olive oil, 3 teaspoons of curry powder, 1 teaspoon of garlic powder, and 1 teaspoon of onion powder. Add a pinch of salt and pepper to taste. Mix everything together until the cauliflower is evenly coated.
3
Transfer the cauliflower mixture to a baking dish and spread it out evenly. This will help the cauliflower cook uniformly.
4
Place the baking dish in the preheated oven and bake until the cauliflower is slightly browned, approximately 25 minutes. This will give it a nice golden color.
5
While the cauliflower is baking, heat a pan over medium heat. Add boneless chicken breast and a pinch of salt and pepper to taste. Stir in the remaining curry, garlic, and onion powders.
6
Cook the chicken in the pan until it is browned, about 5 to 7 minutes. Transfer the cooked chicken to a large serving bowl and leave the pan on the stovetop.
7
In a separate bowl, whisk together egg whites and a pinch of pepper until frothy. Pour the egg mixture into the pan and cook over medium heat, stirring constantly, until it is set but still soft, approximately 3 minutes.
8
Spoon the cooked egg whites into the bowl with the chicken. Add chopped green onions and the roasted cauliflower rice to the mixture.
9
Serve the "fried 'rice'" in individual bowls. Add pineapple chunks, a small splash of pineapple juice, and soy sauce to each bowl for added flavor.
