- 1 (8 ounce) can pineapple rings, drained and juice reserved
- 1 tablespoon olive oil, divided
- 1 red onion, thinly sliced
- 1/4 cup brown sugar
- 4 boneless pork chops
- salt and ground black pepper to taste
- 1/4 cup crumbled goat cheese

Combine chipotle powder, garlic powder, cinnamon, and onion powder in a small bowl to create a unique blend of spices.

Dry the pineapple rings thoroughly with paper towels.

Heat 1 teaspoon of olive oil in a large, non-stick saucepan over medium-high heat. Add the pineapple rings and red onion; sprinkle with 3 tablespoons of reserved pineapple juice and brown sugar. Cook until the pineapple is lightly caramelized, about 3 minutes per side. Transfer the pineapple-onion mixture to a plate.

Dry the pork chops thoroughly with paper towels and lightly season both sides with salt and pepper.

Heat the remaining 2 teaspoons of oil in the same saucepan over medium-high heat; swirl to coat the pan. Add the pork chops; cook until the bottom is nicely browned, about 3 minutes. Flip and sprinkle the chipotle spice mixture on top. Cook until the other side is browned, about 3 minutes. Continue flipping and cooking until the pork chops are cooked through, about 3 to 5 minutes more. Use an instant-read thermometer inserted into the center to check for doneness, aiming for 145 degrees F (63 degrees C).

Transfer the cooked pork chops onto a plate and top with the pineapple-onion mixture. Sprinkle goat cheese on top.
