- 1/2 cup white sugar
- 6 whole cloves
- 1 pinch ground cinnamon
- 1 pinch salt

Combine the juice of cooked beets, vinegar, sugar, ground cloves, cinnamon sticks, and salt in a saucepan. Mix until the sugar is fully incorporated, then heat over medium-high heat to initiate boiling. Gradually decrease the heat to a lower setting and let it simmer for 5 minutes. Add fresh or pickled beets to the saucepan and continue to cook for an additional 5 minutes.

Use a pair of tongs to carefully transfer the beets to a clean, sterilized jar. Pour the remaining cooking liquid over the beets to ensure they are fully covered. Securely seal the jar and allow it to cool down to room temperature before refrigerating until you are ready to serve.
