- 1/2 teaspoon salt
- 1/2 teaspoon garlic granules
- 1/4 teaspoon freshly ground black pepper
- 1/2 medium thinly sliced onion
- 4 (7 inch) tortillas

Heat butter in a saucepan over medium-low heat, stirring occasionally until melted. Combine flour and butter to form a smooth paste, then gradually add milk while continuously whisking until the mixture is free of lumps. Introduce provolone cheese, salt, and white pepper into the mixture, whisking until the cheese is fully incorporated and the sauce has achieved a uniform consistency, approximately 3 to 5 minutes. Set aside for later use.

Brown ground beef in a skillet over medium-high heat, stirring occasionally until it reaches a light brown color, 3 to 5 minutes. Season with salt, garlic granules, and pepper to taste. Add sliced onions to the skillet and cook until they are soft and translucent, blending with the ground beef as it browns, 3 to 5 minutes.

Remove excess fat from the skillet by pouring off any remaining oil. Transfer the ground beef mixture to a separate container, discarding the skillet.

Prepare a tortilla by placing it in a nonstick skillet and adding some of the ground beef mixture to one half. Fold the other half over to enclose the filling, creating a compact sandwich. Cook until the tortilla is evenly browned on both sides, approximately 2 to 3 minutes per side.

Remove the quesadilla from the skillet and cut it into wedges. Repeat this process with any remaining tortillas to create additional quesadillas. Serve immediately, hot and fresh.
