Ingredients
- 3 pounds ground turkey
- 1 cup finely chopped onion
- 4 garlic cloves, minced
- 1 egg
- 1 cup Italian-style bread crumbs
- 1/2 cup grated Parmigiano-Reggiano cheese
- 1/2 cup chopped fresh flat-leaf parsley
- 1/4 cup prepared pesto
- 1/4 cup milk
- 1 tablespoon salt
- 2 teaspoons fresh ground black pepper
- 1 pound fresh mozzarella, cut into small cubes
- 3 tablespoons extra-virgin olive oil
- 2 (24 ounce) jars marinara sauce
Instructions
1
Preheat your oven to a medium-high temperature of 375 degrees Fahrenheit (or 190 degrees Celsius, if you prefer metric).
2
In a large bowl, combine the ground turkey, finely chopped onion, minced garlic, beaten egg, bread crumbs, grated Parmigiano-Reggiano cheese, chopped parsley, pesto, milk, salt, and black pepper. Mix everything together until it's thoroughly incorporated and you have a uniform blend.
3
Using your hands, shape the mixture into 1 3/4-inch meatballs. Create a small indentation in each meatball and insert a cube of cheese into it. Fold the meatball around the cheese to seal it, then place the sealed meatballs on a non-stick baking sheet. Drizzle a small amount of olive oil over the top of each meatball.
4
Place the baking sheet in your preheated oven and bake until the meatballs are no longer pink in the center, which should take around 30 minutes.
5
While the meatballs are baking, heat up your marinara sauce in a small saucepan over low heat. Once the sauce is warm, bring it to a gentle simmer and add the baked meatballs for about 2 minutes.
