Peruvian Huancaina Sauce

  • 1/2 cup chopped onion
  • 3 aji amarillo peppers, seeded and chopped, or more to taste
  • 2 cloves garlic, mashed
  • 3/4 cup evaporated milk
  • 2 cups crumbled queso fresco
  • 4 saltine crackers
  • salt and ground black pepper to taste

Preheat a cooking vessel over an intermediate temperature; heat oil within it until the liquid is hot. Sear the onion, aji peppers, and garlic in the vessel until the onion becomes tender and the mixture takes on a vibrant hue, approximately 5 to 10 minutes. Move the mixture to a processing device; add milk and process until the desired consistency is achieved, creating a uniform sauce. Introduce queso fresco and crackers into the mixture; blend until the sauce is smooth, similar in texture to thick yogurt. Add a pinch of salt and pepper to enhance the flavor.
