Persian Walnut Cookies

  • 3/4 cup white sugar
  • 4 large egg yolks, divided
  • 1 tablespoon ground cardamom
  • 1 teaspoon baking soda
  • 1 tablespoon rose water
  • 1 teaspoon water
  • 1/2 cup walnut pieces for decoration

Preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius. To prepare the baking surfaces, cover two baking sheets with parchment paper to prevent sticking.

Mix together ground walnuts, sugar, 3 egg yolks, cardamom, baking soda, and rose water in a medium-sized bowl until you have achieved a smooth blend. Use your hands or a spoon to combine the ingredients thoroughly.

Using your fingers, shape small balls of dough and place them 2 inches apart on the prepared baking sheets. This will give you enough space for each cookie to spread out during baking.

To create a glaze, whisk together the remaining egg yolk and water using a fork until well combined. Dip each cookie into the glaze by pressing a walnut piece onto it, then brush the top with the egg yolk mixture.

Place the baking sheets in the preheated oven and bake until the cookies are golden brown, taking about 20 minutes. At this stage, they may appear soft and undercooked but will harden significantly when cooled.
