Ingredients
- 1/8 teaspoon saffron threads
- 1 tablespoon boiling water
- 1/4 cup all-purpose flour
- 1 1/2 teaspoons kosher salt, or more to taste
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1 1/2 pounds skinless cod fillets, about 1-inch thick
- 1/4 cup grapeseed oil
- 1/4 orange, juiced
- 1 orange, cut into wedges
- 1 lime, cut into wedges

Grind the saffron threads into a fine powder using a small mortar and pestle. Combine with boiling water in a small bowl, stirring until dissolved. Set aside to infuse.

Combine flour, salt, turmeric, pepper, onion powder, and garlic powder in a large plate. Evenly distribute the mixture to create an even layer.

Pat dry the fish with paper towels, then cut it into 3-inch-long pieces. Sprinkle both sides of the fish with salt before proceeding.

Coat the fish in flour mixture, ensuring all surfaces are evenly covered.

Heat oil in a large pan over medium to high heat. Add the fish and cook for 7 minutes on one side, until golden brown. Flip the fish over and cook for an additional 5 minutes, or until it flakes easily with a fork. Drizzle the saffron-infused water over the fish during the last minute of cooking.

Transfer the cooked fish to a serving platter. Drizzle orange juice over the top and serve with orange and lime wedges on the side
