  • 2 tablespoons rubbed dried sage
  • 2 tablespoons dried thyme leaves
  • 1 tablespoon lemon-pepper seasoning
  • 1 tablespoon salt
  • 1 (15 pound) whole turkey, neck and giblets removed
  • 1 medium orange, cut into 8 wedges
  • 1 medium onion, chopped into large pieces
  • 1 medium carrot, cut into 1/2-inch slices
  • 2 stalks celery, cut into 1/2-inch slices
  • 1 (750 milliliter) bottle champagne
  • 1 (14.5 ounce) can chicken broth

Collect all necessary ingredients beforehand.

Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Cover a roasting pan with layers of aluminum foil, long enough to completely encircle the turkey.

Combine parsley, rosemary, sage, thyme, lemon-pepper seasoning, and salt in a small bowl.

Rub the herb mixture all over the turkey cavity, then fill it with orange slices, onion, carrot, and celery. Secure the turkey's legs together using kitchen twine, then tuck its wings under its body.

Carefully place the turkey on top of the foil in the roasting pan. Pour champagne and chicken broth over the turkey, ensuring some liquid enters the cavity.

Bring the aluminum foil up and cover the top of the turkey, sealing it tightly; make sure the foil doesn't touch the turkey.

Roast the turkey in the preheated oven until its juices run clear, taking 2 ½ to 3 hours. Remove the foil and continue baking until the turkey's skin turns golden brown, requiring an additional 30 to 60 minutes.

Check if the turkey is cooked by inserting an instant-read thermometer into the thickest part of its thigh, close to the bone; it should read 180 degrees Fahrenheit (82 degrees Celsius).

Once cooked, remove the turkey from the oven and cover it with two layers of aluminum foil. Allow it to rest in a warm environment for 10 to 15 minutes before slicing.
