  • 4 potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 eggs
  • 2 teaspoons salt
  • 2 tablespoons all-purpose flour, or as needed
  • 1 teaspoon baking powder
  • 1/4 cup canola oil, or as needed

Combine 1/4 of the potatoes, onion, eggs, salt, flour, and baking powder in a food processor bowl; process repeatedly until the vegetables are finely minced. Add the remaining potatoes and continue processing until all potatoes have been finely chopped and the mixture is well incorporated.

Heat canola oil in a skillet over medium heat. Use a spoon to scoop up about 1/3 cup of the potato mixture at a time and transfer it to the skillet. Cook the latkes until they are golden brown and crispy on the bottom, taking about 2 to 3 minutes. Flip them over and cook the other side until they are also golden brown, taking about 2 to 3 minutes longer.

Continue this process with the remaining potato mixture, replenishing the oil as needed. Serve the latkes hot immediately.
