- 2 pounds pork tenderloin, cut into 1/2 inch strips
- 1/4 cup butter
- 3 onions, thinly sliced
- 3 tablespoons paprika
- 2 tablespoons all-purpose flour
- 1 green bell pepper, cut into strips
- 1 red bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 2 fresh jalapeno peppers, sliced into rings
- 1 cup beef stock
- 3 tablespoons tomato paste
- 2 large cloves garlic, peeled and minced
- 1 teaspoon salt
- 1 bay leaf

Preheat a large cooking vessel over medium heat by warming up the bacon grease. Cook and constantly stir the pork until it is uniformly browned on all sides.

Separate the cooked pork and its accompanying liquid from the pot; place them aside for now.

Next, melt butter in the same cooking vessel over medium heat. Sauté sliced onions in hot butter until they become tender and lightly caramelized, taking care not to burn them.

Combine the paprika with the flour; cook and stir until a thick paste forms.

Add the cooked pork, sliced bell peppers, and diced jalapeño peppers to the pot. Stir in stock, tomato paste, minced garlic, salt, and a bay leaf; bring the mixture to a rolling boil.

Lower the heat, cover the pot, and let it simmer for 1 to 1 1/2 hours, stirring occasionally throughout the cooking process.
