  • 2 medium zucchini
  • 1/3 cup diced onion
  • 12 slices pepperoni sausage, diced
  • 1/2 cup grated Asiago or Parmesan cheese

Preheat the oven to its highest temperature setting, which is 375 degrees Fahrenheit or 190 degrees Celsius.

Cut the zucchini in half lengthwise, making sure to slice through both ends of each piece.

Using a metal spoon, carefully remove the majority of the zucchini's interior flesh and transfer it to a skillet.

Transfer the hollowed-out zucchini pieces to a baking sheet, creating a space for them to hold their shape.

Place the skillet over medium heat on your stovetop and stir in sliced onion and pepperoni.

Allow the mixture to cook for approximately 3 minutes, stirring occasionally.
