- 4 ounces provolone cheese
- 2 ounces Parmigiano-Reggiano cheese
- 1/2 cup prepared pizza sauce
- 30 slices pepperoni

Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).

Prepare a 13x18-inch baking sheet by covering it with parchment paper.

Combine grated provolone and mozzarella cheeses, using the coarse side of a box grater in a large bowl. Use the finer side to grate Parmigiano-Reggiano cheese, then mix everything together with your hands.

Form 12 circular portions of the cheese mixture and place them on the prepared baking sheet. Ensure each portion contains all three types of cheese.

Add a small amount of pizza sauce, approximately ¾ teaspoon, to the center of each cheese circle. Place a single slice of pepperoni on top.

Bake the cheese and pepperoni circles in the center of your preheated oven for 12 to 15 minutes, or until they're melted and sizzling.

Remove the parchment paper from the baking sheet and transfer it to a wire rack to cool. Replace the parchment paper with a fresh sheet, then repeat steps 3-5 for the remaining cheese circles.

Allow the baked chips to cool at room temperature, taking around 15-20 minutes. Once cooled, remove them from the parchment paper and serve.
