Ingredients
- 3 tablespoons crushed black peppercorns
- 2 (8 ounce) beef top sirloin steaks
- 1 tablespoon lemon pepper
- 1 teaspoon salt
- 5 tablespoons butter
- 2 cloves garlic, minced
- 1/2 cup red wine
- 3 tablespoons brandy
- 1/4 cup chopped green onions
- 1 shallot, chopped
- 1/2 cup heavy cream
- 1 teaspoon white sugar
Instructions
1
Coat each steak with a generous amount of crushed peppercorns, pressing them firmly onto both sides of the meat. Sprinkle a pinch of lemon pepper and salt over the peppercorns for added flavor.
2
Melt a generous amount of butter in a large skillet over medium-high heat. Add minced garlic and a splash of wine to the pan, stirring constantly to combine. Cook for 1 minute, allowing the flavors to meld together.
3
Add the steaks to the pan and sear them over medium-high heat for approximately 5 minutes per side, or until they reach your desired level of doneness.
4
Once the steaks are cooked to your liking, reduce the heat to a low simmer and let them rest for a few minutes.
5
Carefully pour a small amount of brandy over the steaks, then use a match to ignite the flames. Allow the flames to burn off, leaving behind a rich, caramelized flavor.
6
Arrange sliced green onions and shallots around the steaks, then drizzle a generous amount of cream over them.
7
Continue to cook the sauce in the pan, stirring constantly until it's hot and bubbly.
8
Transfer the steaks to individual plates, then stir a small amount of sugar into the sauce. Finally, spoon the warm sauce over the top of each steak.
