- 2 tablespoons cornstarch
- 1/2 teaspoon ground ginger
- 3 tablespoons vegetable oil, divided
- 1 red onion, cut into 1-inch squares
- 1 green bell pepper, cut into 1-inch squares
- 2 tomatoes, cut into wedges

Cut the steak into 1/2-inch thick slices by slicing it in a perpendicular direction to its natural fibers.

Combine soy sauce, sugar, cornstarch, and ginger in a bowl and whisk until the sugar is fully incorporated and the mixture is well-mixed.

Place the steak slices into the marinade, stirring until they are evenly coated with the sauce.

Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat, and cook the steak strips in batches to prevent overcrowding.

Cook and stir-fry the steak until it is nicely browned on all sides, about 3 minutes, and transfer the cooked meat to a bowl.

Repeat with the remaining steak slices, adding more oil as needed, and set the cooked meat aside.
