- 1 medium red bell pepper, diced
- 1 medium yellow bell pepper, diced
- 1 cup uncooked quinoa, rinsed
- 2 cups Swanson® Certified Organic Vegetable Broth or Swanson® Vegetable Broth
- 2 tablespoons chopped fresh parsley

Preheat the saucepan by warming the oil over a moderately high heat level. Introduce the shallot and garlic into the saucepan, allowing them to cook for 2 minutes while you occasionally stir the mixture. Next, add the peppers and quinoa to the saucepan, cooking for another 2 minutes while you continue to stir occasionally.

Now, incorporate the broth into the saucepan and bring it to a rolling boil before lowering the heat to a low simmer. Cover the saucepan with a lid and continue cooking until the quinoa is tender and all the liquid has been absorbed, approximately 20 minutes. Finally, stir in some fresh parsley to give the dish a pop of color and flavor; if you wish to enhance the taste, now is the time to add a pinch of seasoning.
