- 1/2 cup white sugar
- 2 tablespoons all-purpose flour
- 1/2 cup molasses
- 1 egg
- 1 cup water
- 3 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 2/3 cup white sugar
- 1/4 cup butter, room temperature
- 1 egg, beaten
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 cup buttermilk

Firstly, preheat your oven to a temperature of 375 degrees Fahrenheit (or 190 degrees Celsius for those using metric measurements).

Then, combine half a cup of sugar with two tablespoons of flour in a bowl and mix until they are fully incorporated. Next, add molasses, beaten egg, one cup of water, a squeeze of fresh lemon juice, and some grated lemon zest to the mixture. Ensure everything is well combined before pouring it into an unbaked pie crust.

In a separate bowl, use an electric mixer to cream together the remaining two-thirds cup of white sugar and butter until it reaches a light and fluffy consistency. Add another beaten egg to the mixture, followed by sifting one and a quarter cups of flour and baking soda together. Gradually add the sifted mixture to the creamed butter mixture, incorporating buttermilk into the mix. Finally, spread this batter evenly over the top of the mixture in the pie shell.

Once you've prepared your pie, place it in the preheated oven and bake for 35 to 40 minutes, or until the filling is set.
