Ingredients
- 1 (16 ounce) package penne pasta
- 1 1/2 tablespoons butter
- 1/2 cup chopped red onion
- 2 cloves garlic, minced
- 1 pound skinless, boneless chicken breast halves - cut into bite-size pieces
- 1 (14 ounce) can artichoke hearts in water
- 1 tomato, chopped
- 1/2 cup crumbled feta cheese
- 3 tablespoons chopped fresh parsley
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- salt to taste
- ground black pepper to taste

Boil a large pot of water with salt added, then cook penne pasta until it reaches the desired firmness. Remove from heat and drain the water.

In a large pan over medium-high heat, melt butter, add chopped onion and minced garlic and cook for 2 minutes. Add diced chicken and continue cooking, stirring occasionally until it's golden brown on all sides, taking around 5 to 6 minutes.

Lower the heat to a lower setting. Drain and chop artichoke hearts, then add them along with chopped tomatoes, crumbled feta cheese, fresh parsley leaves, a squeeze of lemon juice, dried oregano, and cooked penne pasta to the large pan. Cook until everything is well combined and heated through, approximately 2 to 3 minutes.

Add a pinch of salt and some ground black pepper to taste. Serve the dish warm.
