  • 12 ounces canned San Marzano-style peeled plum tomatoes
  • 1 (8 ounce) can tomato sauce
  • 1/2 cup vodka
  • 1 tablespoon minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 pinch salt and ground black pepper
  • 1 cup heavy whipping cream
  • 1/4 cup grated Parmesan cheese, or to taste

Fill a large pot with water that has been lightly seasoned with salt and bring it to a rolling boil. Introduce the penne pasta into the pot and continue boiling until the water returns to a boil, then proceed with cooking the pasta uncovered while occasionally stirring it. Continue boiling until the pasta reaches a cooked state but still retains some firmness in its bite, approximately 11 minutes; then drain the water from the pot. Transfer the cooked pasta to a serving dish.

Next, pour canned crushed tomatoes into a skillet that is set over medium heat. Stir in the tomato sauce, vodka, minced garlic, dried oregano, fresh basil leaves, salt, and pepper. Allow the sauce to simmer gently over medium heat while occasionally stirring it until all the alcohol has evaporated, typically taking 15 to 20 minutes. Stir in heavy cream and continue simmering until the cream has heated through, approximately 5 more minutes. Remove the sauce from the heat source.

Finally, pour the prepared tomato sauce over the cooked penne pasta and gently toss to coat it evenly. Sprinkle a generous amount of Parmesan cheese over the top of the pasta to add flavor and texture.
