Ingredients
- 4 (6 ounce) cod fillets
- salt and ground black pepper to taste
- 3/4 cup panko bread crumbs
- 3/4 cup grated Pecorino Romano cheese
- 3 tablespoons mayonnaise
- 2 tablespoons butter, softened
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 2 dashes Worcestershire sauce
Instructions
1
Preheat the oven to a high temperature of 425 degrees Fahrenheit, or 220 degrees Celsius.
2
Cover a baking sheet with parchment paper to prevent sticking and make cleanup easier.
3
Pat dry the cod fillets thoroughly by gently placing them on a paper towel and covering with another layer. Press down firmly to remove excess moisture.
4
Sprinkle both sides of the cod fillets with a pinch of salt and pepper, then place them on the prepared baking sheet.
5
Mix together bread crumbs, Pecorino Romano cheese, mayonnaise, butter, dried oregano, fresh thyme leaves, and Worcestershire sauce in a bowl until well blended. Taste and adjust the seasoning with salt and pepper as needed.
6
Apply a generous amount of the topping mixture to each cod fillet, spreading it evenly to cover the entire surface.
7
Bake the cod in the preheated oven for 8-10 minutes, or until it reaches your desired level of doneness.
8
Finish the cod under the broiler for 2-3 minutes, or until the topping is golden brown and flakes easily with a fork.
9
Serve the cod immediately, hot from the oven.
