  • 2 cups chopped pecans

Combine the brown sugar and evaporated milk in a medium-sized saucepan.

Heat it over high heat, stirring constantly to make the sugar disappear. As soon as the mixture starts bubbling vigorously, attach a candy thermometer to the side of the pan.

Continue heating until the mixture reaches 232 degrees F (or 112 degrees C), or when a small amount of syrup is dropped into cold water, it forms a soft ball that flattens slightly when taken out of the water and placed flat on a surface.

Take the saucepan off the heat source and use a sturdy wooden spoon to mix in vanilla extract. Add butter and pecans, stirring continuously until the mixture thickens and becomes creamy. It will lose its luster during this process.

Spoonfuls of the mixture onto a sheet of wax paper and let it cool at room temperature until set. Store the finished treats in an airtight container at room temperature.
