- 1 1/2 tablespoons lemon juice
- 1 tablespoon extra-virgin olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- lemon wedges for serving

Combine water, farro, and a pinch of salt in a small saucepan. Heat over high flames until the mixture reaches a rolling boil. Cover the pan and continue to cook on low heat, allowing the water to evaporate gradually, approximately 20 minutes.

Remove from heat and let it rest for a few minutes to allow excess moisture to dissipate.

Combine chopped celery, crumbled feta cheese, dried cherries, thinly sliced green onion, toasted pecans, lemon zest, freshly squeezed lemon juice, olive oil, a small amount of salt, and pepper in a bowl. Add the cooked farro; gently stir to merge the ingredients together. Serve with lemon wedges on the side.
