Pear Flan
Ingredients
  • 2 tablespoons unsalted butter, softened, divided
  • 3 large eggs
  • 1/3 cup white sugar, or to taste
  • 1 1/4 cups whole milk
  • 1/4 teaspoon fine salt
  • 1 pinch freshly grated nutmeg
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 2/3 cup all-purpose flour
  • 3 cups thinly sliced sweet, ripe pears
  • 1/2 cup toasted sliced almonds
  • 1/2 tablespoon white sugar, or as needed
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to get it ready for baking.
2
Next, take a 10-inch baking dish and give it a generous coating of butter to prevent the cake from sticking.
3
In a separate bowl, combine eggs, 1/3 cup of sugar, milk, salt, nutmeg, vanilla extract, almond extract, and flour. Whisk these ingredients together until they're well incorporated.
4
For the topping, set aside 12 to 14 slices of pear and add the remaining slices to your prepared baking dish.
5
Pour the egg custard mixture over the pears in the baking dish, followed by a sprinkle of almonds. Gently shake and tap the dish on the countertop to ensure everything is evenly distributed.
6
Lay out the reserved pear slices flat on top of the mixture, making sure they're evenly spaced.
7
Melt any remaining butter and brush it over the pear slices for added flavor.
8
Sprinkle a small amount of sugar - about 1/2 tablespoon - over the pears for extra sweetness.
9
Place your baking dish in the preheated oven and bake until the top is golden brown, the fruit is soft, and the custard is set - approximately 45 minutes.
10
Remove your dish from the oven and let it cool down to room temperature before serving, or serve chilled.
