Ingredients
- 6 slices bacon
- 1 bunch collard greens, chopped
- 1/3 cup vegetable oil
- 3 cups water, plus more as needed
- 3 cubes chicken bouillon
- 1/3 cup creamy peanut butter
- 1 teaspoon liquid smoke flavoring
- 1 pinch soul food seasoning, or to taste
- 1 pinch cayenne pepper, or to taste
- salt to taste
- ground black pepper to taste
- 2 (6 ounce) fillets flounder
Instructions
1
Begin by placing the bacon in a substantial skillet, allowing it to cook over a moderately high heat level, flipping it periodically, until it has achieved an even brown color, approximately 10 minutes. Remove the bacon slices from the skillet and lay them out on a plate lined with paper towels, where they can be crumbled into smaller pieces.
2
Next, combine the collard greens, vegetable oil, water, and chicken bouillon in a large cooking vessel over a medium heat setting. Allow the mixture to simmer until the greens have wilted, roughly 10 minutes.
3
Subsequently, add the crumbled bacon, peanut butter, liquid smoke, soul food seasoning, cayenne pepper, salt, and black pepper into the pot; cover it and continue to simmer until the greens have become very tender and the peanut butter begins to separate, approximately 1 1/2 hours. If the mixture becomes too dry, add additional water to compensate.
4
Finally, incorporate the flounder fillets into the greens mixture. Continue to cook, stirring constantly, until the fish has broken down, roughly 30 minutes more.
