Peanut Cilantro Chicken

  • 2 teaspoons canola oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch strips
  • 1 ounce honey-roasted peanuts
  • 4 cloves garlic, minced
  • 2 teaspoons minced fresh ginger
  • 1/4 cup sliced green onions
  • 1 tablespoon low-sodium soy sauce
  • 2 teaspoons rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 cup fresh cilantro, chopped
  • 4 cups shredded napa cabbage

Preheat a large, thick-bottomed 10-inch skillet over extremely high heat. Introduce canola oil into the skillet and bring it to a boiling point. Add chicken breast; cook and constantly move the ingredients around for 2 minutes. Introduce peanuts, garlic, and ginger into the mixture; cook until chicken is fully cooked and no longer has a pinkish hue, approximately 3 minutes.

Add green onions, soy sauce, rice vinegar, and sesame oil to the skillet. Continue cooking and stirring for 2 minutes more. Remove the skillet from the heat source. Introduce cilantro into the mixture and stir well.

Transfer the chicken stir-fry to a bed of shredded cabbage, and serve.
