Peach Tartlets with Apricot Shine

  • 1 (17.3 ounce) package frozen puff pastry, thawed
  • 3/4 cup apricot preserves, divided
  • 2 peaches - peeled, pitted, and thinly sliced, or more as needed
  • 2 teaspoons hot water, or as needed

Preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius). To prepare the baking sheets, cover them with a layer of parchment paper to prevent sticking.

Cut each sheet of puff pastry into nine equal-sized squares, approximately 3 inches in size. Using a small amount, apply a dab of apricot preserves to the center of each square.

Place 3 slices of peach over the preserves, leaving a thin border of pastry exposed around the edges. Next, spoon a small amount of apricot preserves over the top of the peach slices.

Place one baking sheet in the preheated oven and bake until the puff pastry turns a golden color, taking around 10 minutes. Repeat this process with the second baking sheet.

To create a glaze, mix 2 teaspoons of hot water with the remaining apricot preserves in a small bowl. This will help thin out the preserves and achieve the desired consistency.

Spoon some of the glaze over each baked tartlet, then return them to the oven for an additional 2 minutes, or until they reach a golden brown color. Repeat this process with the second baking sheet.

Once all the tartlets have been baked, allow them to cool on a wire rack before serving. This process should take around 10 minutes.
