Peach Jam Coffee Crumble
Ingredients
  • 2 1/4 cups all-purpose flour
  • 3/4 cup white sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground nutmeg
  • 3/4 cup unsalted butter, softened
  • 1 cup plain whole-milk Greek yogurt
  • 1 large egg, at room temperature
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 1 cup peach jam
  • 2 small fresh peaches - peeled, pitted, and sliced
Instructions
1
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) for optimal baking results.
2
Next, take a moment to lightly coat the interior of a 9-inch springform pan with non-stick cooking spray.
3
To begin preparing the cake batter, combine flour, sugar, baking powder, cinnamon, cardamom, salt, and baking soda in a large mixing bowl. Whisk these dry ingredients together until they are completely incorporated and well combined.
4
Using your fingers or a pastry blender, work the butter into the dry ingredients mixture until it resembles coarse crumbs. Set aside 1 cup of this crumb mixture for the cake's topping.
5
In a separate mixing bowl, whisk together yogurt, egg, vanilla extract, and almond extract until thoroughly combined.
6
Merge the wet ingredients with the dry ingredients mixture until a smooth batter forms.
7
Pour the cake batter into the prepared springform pan, pressing it evenly into the bottom and 1 inch up the sides of the pan.
8
Using a spoon, spread an even layer of peach jam into the center of the cake batter.
9
Top the jam with a layer of sliced peaches.
10
Evenly sprinkle the reserved 1 cup crumb topping over the peaches.
11
Bake the cake in a preheated oven for 45 to 50 minutes, or until it reaches a golden brown color.
12
Once the cake is done baking, remove it from the oven and let it cool for 20 minutes.
13
Using a knife, gently run along the edges of the pan to release the cake from its sides.
14
Allow the cake to cool completely before slicing and serving.
