- 2 tablespoons brown mustard
- 1/2 cup packed brown sugar
- 1/4 cup packed brown sugar
- 2 tablespoons apple cider vinegar
- 1 cup peach nectar
- 1 cup peach preserves
- 5 cups frozen peach slices
- 2 teaspoons minced fresh ginger root
- 1 hot cherry pepper, seeded and minced
- 1 (3 inch) cinnamon stick

Begin by preheating your oven to the ideal temperature of 325 degrees F (165 degrees C). Utilize a sharp, serrated knife to create a decorative pattern on the surface of the ham by making diagonal cuts. Insert whole cloves into the ham and position it on a roasting rack placed within a roasting pan.

Proceed to bake the ham in the preheated oven for 1 1/2 to 2 hours, or until it has reached the desired internal temperature of 140 degrees F (60 degrees C). If the ham appears dry, cover it with aluminum foil to prevent further drying.

While the ham is cooking, prepare a mixture of cinnamon, mustard, and 1/2 cup of brown sugar in a small container. Set this mixture aside for later use.

In a saucepan over medium heat, combine the remaining brown sugar, cider vinegar, peach nectar, and peach preserves. Bring this mixture to a boil before adding sliced peaches, ginger, cherry pepper, and cinnamon stick. Simmer the sauce for 25 to 30 minutes, or until the peaches are tender and the sauce has thickened.

Remove the ham from the oven and generously brush it with the prepared mustard glaze. Increase the oven temperature to 350 degrees F (175 degrees C) and return the ham to the oven, this time without a lid.

Bake for an additional 20 to 30 minutes, or until the glaze is bubbly and caramelized. Allow the ham to rest for 15 to 20 minutes before slicing and serving with hot Peach-Ginger sauce.
