Ingredients
- 1 cup all-purpose flour
- 5 1/2 teaspoons white sugar, divided
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 tablespoons cold butter, cubed
- 1/2 cup milk
- 1 tablespoon milk
- 1/4 teaspoon ground cinnamon
- 1/3 cup water
- 2 tablespoons white sugar
- 1 teaspoon cornstarch
- 1/8 teaspoon ground cinnamon
- 4 peaches, sliced
- 3/4 cup heavy cream
Instructions
1
First, preheat your oven to 425 degrees Fahrenheit or 220 degrees Celsius. Next, prepare a baking sheet by lining it with parchment paper and set it aside for now.
2
Sift together 4 1/2 teaspoons of sugar, flour, baking powder, and salt in a bowl. Use your fingers to rub the butter into the dry ingredients until you get a mixture that resembles coarse crumbs. Then, add 1/2 cup of milk and stir until the dough comes together in a soft consistency.
3
Divide the dough into 4 equal parts and shape each part into a 2-inch diameter circle. Place these circles onto the prepared baking sheet.
4
Brush the tops of each biscuit with 1 tablespoon of milk. To add a finishing touch, mix together the remaining 1 teaspoon of sugar and cinnamon in a small bowl, then sprinkle it evenly over the tops of each biscuit.
5
Place the biscuits in the preheated oven and bake until they start to brown on the edges, which should take around 12 minutes. Remove them from the oven and let them cool on a wire rack.
6
Simultaneously, whisk together 1/2 cup of water, 1 teaspoon of sugar, 1 tablespoon of cornstarch, and 1/2 teaspoon of cinnamon in a medium saucepan over medium heat. Add sliced peaches to the saucepan and cook until the sauce thickens, stirring occasionally to coat all of the peaches.
7
Once the biscuits have cooled slightly, whip heavy cream in a bowl until it forms stiff peaks. This will be the topping for your biscuits.
8
Cut each biscuit in half horizontally and place the bottoms on a serving plate. Add a dollop of whipped cream, followed by 1/4 of the cooked peaches, another dollop of whipped cream, and finally the top half of the biscuit. Serve immediately.
