Ingredients
- 4 cups fresh peaches - peeled, pitted, and sliced
- 1 cup fresh raspberries
- 3/4 cup white sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 2 (9 inch) pie crusts
- 2 tablespoons butter, softened and cut into pieces
- 1 tablespoon coarse granulated sugar
Instructions
1
Preheat your oven to the desired temperature of 400 degrees Fahrenheit or 200 degrees Celsius.
2
Take a colander and fill it with peaches and berries. Allow them to sit for approximately 15 minutes, allowing any excess moisture to drain off. Then, transfer the fruit mixture to a large bowl.
3
Add granulated sugar, all-purpose flour, and ground cinnamon to the bowl with the fruit mixture. Gently mix everything together until well combined.
4
Take one pastry sheet and place it at the bottom of a 9-inch pie dish. Fill the pastry-lined dish with the fruit mixture, then dot the top with small pieces of butter.
5
Take the remaining pastry sheet and place it on top of the fruit filling. Use a knife or pastry brush to cut small slits in the top crust, creating vents for steam to escape. Finally, sprinkle a generous amount of coarse sugar over the top pastry.
6
Bake the pie in the preheated oven for approximately 45 minutes, or until the pastry crust is golden brown and crispy.
