Pea and Mint Bruschetta
Ingredients
  • 1 tablespoon butter
  • 4 shallots, minced
  • 3/4 cup fresh or frozen peas
  • salt and freshly ground black pepper to taste
  • 2 tablespoons chopped fresh mint
  • 6 slices ciabatta bread
  • 2 tablespoons extra-virgin olive oil, or as needed
  • 1 clove garlic, peeled

Melt butter in a skillet over medium heat and cook the shallots until they become translucent, about 5 minutes. Add the peas to the skillet and continue cooking until they are tender but still retain some crunch, around 5 minutes. Add a pinch of salt and pepper to taste.

Transfer the cooked shallot-pea mixture to the bowl of a food processor and process until you achieve a coarse, chunky consistency. Mix in some chopped fresh mint leaves.

Cut the ciabatta into halves and brush them lightly with olive oil. Take a clove of garlic and rub it gently onto each ciabatta half.

Position an oven rack about 6 inches away from the heat source and preheat your broiler to its highest setting. Place the ciabatta halves on a baking sheet and bake in the oven until they are lightly toasted, approximately 3 minutes.

Remove the ciabatta from the oven and spread a layer of the pea mixture onto each slice. Serve hot, straight away.
