Pasta Shell Tacos
Ingredients
  • 1 1/4 pounds lean ground beef
  • 1 (3 ounce) package cream cheese
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 18 jumbo pasta shells
  • 2 tablespoons butter, melted
  • 1 cup taco sauce
  • 1 cup shredded Cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 1/2 cups crushed tortilla chips
  • 1 cup sour cream
Instructions
1
Sear the beef in a large skillet over medium heat until it reaches an internal temperature of 145 degrees Fahrenheit; remove from the pan. Combine softened cream cheese, salt, and chili powder; stir until well incorporated and let it sit for 5 minutes.
2
Simultaneously, bring a large pot of salted water to a rolling boil. Add pasta and cook until it reaches the desired level of doneness, typically 8 to 10 minutes; drain excess water. Toss cooked pasta shells in melted butter.
3
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
4
Stuff pasta shells with the beef mixture and arrange them in a 9x13-inch baking dish; pour taco sauce over the shells. Cover the dish with aluminum foil and bake in the preheated oven for 15 minutes.
5
Take the dish out of the oven and sprinkle shredded Cheddar cheese, Monterey Jack cheese, and crushed tortilla chips on top. Return the dish to the oven for an additional 15 minutes.
6
Finish the dish by topping it with a dollop of sour cream and serve immediately.
