- 4 tablespoons Parmesan cheese
- 1/4 teaspoon salt
- ground black pepper to taste

- 1 tablespoon grated Parmesan cheese, or to taste
- 1 pinch salt
- 1/4 cup sour cream, for topping

Combine the grated zucchini with a pinch of salt in a bowl and mix until they are evenly blended. Allow the mixture to rest for 10 minutes, allowing the flavors to meld together.

Transfer the zucchini mixture onto a clean dish towel or cheesecloth and gently press it through to extract as much liquid as possible. Discard the excess moisture.

In a separate bowl, whisk an egg until it becomes light and fluffy. Gradually add flour, Parmesan cheese, salt, and pepper to the bowl, stirring until well combined.

Add the drained zucchini to the egg mixture and stir until everything is fully incorporated.

Heat a moderate amount of oil in a medium-sized pan over high heat. Using a spoon, drop small portions of the batter into the hot oil, about one tablespoon at a time. Cook the fritters until they are golden brown on both sides, taking approximately 5 minutes per batch.
