Parmesan Stuffed Artichokes
Ingredients
  • 1/2 cup butter
  • 1 cup grated Parmesan cheese
  • 3 (14 ounce) cans artichoke bottoms, drained
  • 1 teaspoon lemon pepper
  • 1 teaspoon garlic salt
  • 8 ounces cream cheese, softened
  • 1 tablespoon sour cream
  • 2 tablespoons chopped fresh chives
Instructions
1
Firstly, preheat your oven to a moderate temperature of 325 degrees F (165 degrees C). Next, lightly coat the interior surface of a standard-sized baking dish measuring 9x13 inches with a thin layer of cooking oil.
2
Melt a small amount of butter in a low-heat saucepan, then carefully remove it from the heat source and set it aside. Place a selection of grated Parmesan cheese into a shallow dish, also setting it aside.
3
To prepare the artichokes, carefully remove a thin slice from the bottom of each one to create a stable base. Using your thumb, gently press a small indentation into the center of each artichoke bottom to create a depression for the filling. Sprinkle both sides of the artichokes with a blend of lemon pepper and garlic salt.
4
In a separate bowl, combine softened cream cheese, sour cream, and chopped chives. Mix these ingredients thoroughly until they are well combined. Fill each artichoke bottom with a small amount of the filling mixture, approximately 1 tablespoon per item.
5
Now, dip each stuffed artichoke bottom into the melted butter, then roll it in a layer of grated Parmesan cheese before placing it into the prepared baking dish. Finally, bake the artichokes in the preheated oven until their tops are golden brown and crispy, taking around 45 minutes to achieve this result.
