Parmesan Chicken Meatballs

  • 1 large egg, beaten
  • 3/4 cup grated Parmesan cheese
  • 1 3/4 cups Italian-style panko bread crumbs, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 3/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/2 pounds ground chicken
  • 2 tablespoons olive oil, divided
  • 2 tablespoons unsalted butter, divided
  • 1 (28 ounce) jar marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons snipped fresh parsley

Combine egg, Parmesan cheese, panko crumbs, garlic powder, Italian herb blend, crushed red pepper, salt, and black pepper in a large bowl. Mix everything thoroughly until well combined

. Put on disposable gloves, add chicken to the bowl, and mix with your hands until all ingredients are well incorporated

. Place a portion of panko crumbs on a plate, then use a 1-1/2-inch scoop to shape about 24 meatballs. Gently coat each meatball with crumbs, then set them aside on the plate

Preheat your oven to 350 degrees F (175 degrees C). In a large, oven-safe skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add half the meatballs and cook until browned on both sides, turning frequently to achieve even browning. Transfer the cooked meatballs to a plate and wipe the skillet clean

Repeat the process with the remaining oil, butter, and meatballs. Cook the second batch in the same way as the first

Wipe out the skillet again and pour in marinara sauce. Place the browned meatballs in the sauce, making sure they're not fully submerged

Bake the mixture in a preheated oven for 25 minutes. Remove from the oven and sprinkle with shredded mozzarella cheese, then return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly. Finally, sprinkle with fresh parsley
