  • 2 tablespoons olive oil, plus more for drizzling
  • 2 tablespoons sherry vinegar
  • 1 teaspoon smoked paprika, plus more for topping
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 cup sliced green onions
  • 1 red jalapeno pepper, sliced
  • 2 (8 ounce) thick-cut boneless, skinless Chilean sea bass fillets

Heat the oven to its highest temperature setting, which is equivalent to 450 degrees F (230 degrees C).

Prepare a baking dish by applying a thin layer of cooking oil to it.

Place the potatoes in a microwave-safe container and cook on maximum power until they are tender but still firm, approximately 5 minutes.

Combine oil and vinegar in a bowl and whisk them together until smooth. Add paprika and salt, then stir in chopped green onions and sliced jalapeño. Mix well to combine with the cooked potatoes, coating them evenly.

Add the sea bass fillets to the bowl and gently turn them several times to coat with the vinaigrette dressing. Transfer the fish to a serving plate.

Transfer the potatoes to the prepared baking dish, then carefully place the sea bass fillets on top of them. Sprinkle a small amount of salt and paprika over the fish, followed by a light drizzle of oil.
