- 2 ounces pancetta, chopped
- 3 tablespoons chopped onion
- 1 pound frozen peas, thawed
- 1/4 cup dry white wine
- 1 1/2 tablespoons chopped fresh thyme leaves
- salt and ground black pepper to taste

Melt olive oil in a cooking vessel over an intermediate temperature. Sear and blend pancetta and onion in the hot oil until pancetta becomes transparent, approximately 5 minutes. Combine peas, wine, thyme, salt, and pepper into the mixture, then initiate a boil. Lower the heat and let it simmer until peas are soft and the liquid has decreased slightly, around 3 to 5 minutes.
