  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/4 cup milk
  • 2 eggs, beaten
  • 2 cups Italian seasoned bread crumbs
  • 8 walleye fillets

Preheat the pans by heating 1/8 inch of vegetable oil over medium-high heat in two large cast-iron or heavy-duty frying pans.

Prepare the breading station by arranging three separate pie plates or shallow bowls in a row, each one designated for coating the fish.

In one of these bowls, mix together flour, salt, and pepper to create a dry coating. In another bowl, whisk together milk and eggs to make a liquid coating. In the third bowl, place bread crumbs ready for final coating.

Dip each fillet into the flour mixture, then gently transfer it to the egg wash, and finally coat it thoroughly with bread crumbs.

Carefully place 4 fillets in each frying pan. Cook until the fish is golden brown, which should take about 5 to 7 minutes per side.
