- 1 lemon, halved
- 1/2 cup white wine
- 2 tomatoes, seeded and chopped
- 3 tablespoons capers
- 1 cup asparagus spears, trimmed and cut in half
- 3 tablespoons butter

Preheat a large non-stick skillet over medium heat. Anoint the fillets with olive oil and flavor with salt and pepper. Position the fillets in the skillet and scatter half of the lemon slices over them. Sear for 3 minutes per side, or until the fish breaks apart effortlessly with a fork. Transfer the fillets to a plate and keep them warm.

Next, pour in wine, combine the remaining 1/2 lemon slices, tomatoes, capers, and a pinch of salt and pepper into the skillet. Boost the heat to medium-high and bring to a boil for 2 minutes, allowing the alcohol to evaporate. Lower the heat to low and reintroduce the fillets to the pan along with the asparagus. Cover the skillet and simmer for an additional 2 minutes, then transfer the fish and asparagus to a serving dish and keep them warm.

Finally, elevate the heat to medium-high once more and whisk in butter until it reaches your desired consistency. Ladle the sauce over the fish, and present.
