Pan-Seared Partridge with Bacon Sauce
Ingredients
  • 4 boneless partridge breast halves
  • 8 slices bacon
  • 1 cup chicken broth
  • toothpicks
  • 1 cup white wine
  • 2 shallots, chopped
  • 4 cloves garlic, chopped
  • 1 teaspoon salt
  • freshly ground black pepper to taste
  • 3 tablespoons all-purpose flour

Preheat your oven to 325 degrees Fahrenheit (165 degrees Celsius).

Heat a large skillet over medium-high heat, and sauté the slices of bacon until they have released their juices but are still tender. Set the cooked bacon aside for later use.

Add the partridge breast halves to the skillet and sear them quickly on both sides for approximately 2 minutes. Remove the cooked partridge pieces from the skillet and prepare them for further cooking.

Wrap each of the partridge pieces with two slices of bacon, securing it with a toothpick to keep everything in place.

Pour enough of the remaining skillet drippings into a baking dish, covering the bottom. Then, place the wrapped partridge pieces along with chicken broth, white wine, minced shallots, garlic, salt, and black pepper into the baking dish.

Roast the partridge pieces uncovered in the preheated oven for 45 minutes. Remove any excess drippings from the baking dish using a turkey baster, and transfer them to a saucepan.

Whisk in the flour into the saucepan with the drippings, and cook over medium-low heat, stirring constantly until the mixture thickens. Serve the rich gravy alongside the roasted partridge.
