Ingredients
- 2 (3 ounce) fillets salmon, with skin
- sea salt to taste
- 2 tablespoons olive oil
Instructions
1
Wash the salmon fillets under cold running water, then gently remove excess moisture with paper towels. Sprinkle a pinch of salt onto the fish to enhance flavor.
2
Heat a generous amount of olive oil in a large, deep skillet over high heat.
3
Sear the salmon fillets, skin-side up, in the hot oil until the flesh develops a rich golden color, 5 to 7 minutes; flip and continue cooking for an additional 5 minutes or until the skin is lightly browned. Utilize a slotted spoon to carefully lift the salmon from the skillet, leaving behind the flavorful drippings.
4
Carefully remove the skin from the salmon fillets and fry it in the remaining oil until crispy, 2 to 3 minutes. Present the crispy skin alongside the cooked salmon.
