- 3 tablespoons olive oil
- 3/4 cup ice water
- 3/4 cup all-purpose flour
- 1 egg yolk
- 2 tablespoons olive oil, or as needed
- 1 pound rock shrimp, peeled and deveined

To prepare the dipping sauce, combine egg yolk, chili-garlic sauce, rice vinegar, sea salt, and black pepper in a mixing container. Gradually add 3 tablespoons of oil while whisking continuously until the sauce achieves a smooth consistency

To create the batter, blend ice water, flour, and egg yolk in a large mixing vessel to produce the desired batter mixture

Heat 1 tablespoon of olive oil in a medium-sized cooking pan over an intermediate heat setting. Dip some shrimp into the batter, allowing any excess to fall away, and cook in the hot oil until it is evenly browned on both sides, taking approximately 3 to 5 minutes. Remove the cooked shrimp from the oil with paper towels and repeat the process using the remaining olive oil and shrimp.

Transfer the cooked shrimp to a large serving container. Pour the prepared dipping sauce over the top and mix until every piece of shrimp is fully coated
