  • 1 egg
  • 1 teaspoon finely chopped fresh oregano
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil
  • freshly ground black pepper
  • 2 large ripe tomatoes, sliced
  • 1 lemon, cut into wedges

Cut the feta into 2x3/8 inch squares, approximately 8 pieces. In a small bowl, whisk the egg with the dried oregano until well combined. Dip each slice of feta into the egg mixture, gently removing any excess and then coating it evenly with flour.

Heat a generous amount of olive oil in a frying pan over medium heat. Cook the cheese slices quickly in the hot oil until they turn golden brown, flipping them once to ensure even cooking. Remove excess oil by gently patting the cheese with paper towels.
