Ingredients
- 1/4 cup oil
- 2 pounds lamb chops
- 3 pods green cardamom
- 2 bay leaves
- 1 cinnamon stick
- 1 teaspoon cumin seeds
- 1 pod black cardamom
- 6 large onions, thinly sliced
- 6 cloves garlic, minced
- 1 tablespoon minced fresh ginger root
- 2 teaspoons red chile powder
- 1/2 teaspoon ground turmeric
- salt to taste
- 3 green chile peppers, halved and seeded
- 2 tomatoes, chopped
- 1/4 cup water
- 1 tablespoon chopped fresh cilantro, or to taste

Heat a substantial amount of oil in a large, deep skillet over a moderate temperature setting. Sear lamb chops on all sides until they are nicely browned, approximately 5 minutes. Set the lamb chops aside for now.

Introduce green cardamom pods, bay leaves, a cinnamon stick, cumin seeds, and black cardamom into the skillet; allow them to infuse their flavors for about 1 minute. Add sliced onions, minced garlic, and grated ginger; cook until the onions turn a golden hue, roughly 10 minutes. Add a blend of spices including chili powder, turmeric, and salt; stir-fry for 1 minute.

Add the previously set aside lamb chops, sliced chile peppers, diced tomatoes, and water to the skillet; simmer over a low heat setting until the lamb is tender, all the water has evaporated, and the onions have broken down into a rich, thick gravy, approximately 40 minutes. Garnish each serving with chopped cilantro
