Ingredients
- 1 quart vegetable oil for frying
- 1 1/2 cups gram flour (chickpea flour)
- 1 teaspoon salt
- 1 teaspoon cayenne pepper
- 1 teaspoon whole cumin seeds
- 1/4 teaspoon baking powder
- 1/2 cup lukewarm water, or as needed
- 4 large potatoes, peeled and thinly sliced lengthwise

Preheat the deep-fryer or large saucepan to a high temperature of 375 degrees F (190 degrees C).

Combine gram flour, salt, cayenne pepper, cumin seeds, and baking powder in a bowl and whisk them together until well-mixed. Gradually add lukewarm water to the flour mixture, stirring continuously and adding it 1/2 cup at a time until you achieve a thick pancake-like batter consistency.

Dip the potato slices into the prepared batter, ensuring they are fully coated.

Cook the coated potatoes in hot oil in batches, turning them occasionally until they turn golden and crispy, taking around 2 to 4 minutes. Remove the potatoes from the oil and place them on a paper-towel lined plate to drain excess oil.
