Pakistani Roasted Chicken Thighs

  • 2 pounds chicken thighs
  • 1 lemon, juiced
  • 2 tablespoons ketchup
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 2 teaspoons garam masala
  • 2 teaspoons brown sugar
  • 2 teaspoons chile powder
  • 1 teaspoon paprika
  • 1 teaspoon dried sage
  • 1 teaspoon dried mint

Prepare the chicken thighs by placing them in a container. Add a blend of flavors, including lemon juice, ketchup, garlic powder, onion powder, coriander, cumin, garam masala, brown sugar, chile powder, paprika, sage, and mint. Combine these ingredients thoroughly to coat the chicken evenly. Use your hands to gently massage the seasonings onto both the top and underside of the chicken thighs.

Cover the bowl with a layer of aluminum foil and refrigerate for 4 hours or longer, allowing the flavors to penetrate the meat.

Heat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Spray a baking dish with cooking spray for non-stick performance. Arrange the chicken thighs on the bottom of the prepared baking dish.
